Baking Traditions by S.J. Maylee
Some of my earliest memories are baking with my mom and grandma. While my mom took this picture, my grandma was probably reminding me to roll in different directions. I still make and roll out my dough as they taught me. Good memories. My mom actually continues to store her flour in the wooden canister you can see in the picture here. Some things just don’t need to change.
We make some of the tastiest things during the holidays. I’m currently responsible for two of our most important cookies, the gingerbread men and the buckeyes. My mom makes pita piata which is rolled dough filled with different kinds of raisins and nuts and then baked. It’s an old Italian tradition. She makes dozens of them and passes them out. Everyone looks forward to it. It’s so good with coffee. I can’t wait!
I want to share one of our traditions with you!
1 stick butter softened
2 cups crunchy peanut butter
4 cups Rice Krispies
3 cups unsifted powdered sugar
12 oz bag of semi-sweet chocolate chips
1” square of food-grade paraffin wax
You need to get your hands dirty with this cookie. Put the peanut butter and butter in a bowl and use your hands to mix well. Again with your hands, mix in 2 cups of Rice Krispies at a time. Lastly, mix in the powdered sugar. Roll the mixture into the size of cookie you want and set them on a parchment covered cookie sheet.
Using a double boiler, melt your chocolate chips over low to medium heat. Keep your eye on the chocolate, don’t over heat. Add a bit of paraffin at a time until the chocolate falls freely from your spoon.
Now, the typical buckeye nut has a bit uncovered with dark brown, but my rule is to cover the whole cookie with chocolate. Who doesn’t want more chocolate and it makes this last step easier. Using a couple of spoons, cover each ball with chocolate and set them to cool and harden on the parchment covered cookie sheet.
